
Greg Plummer
Greg Plummer is a seasoned restaurateur, entrepreneur and community advocate based in Los Angeles, CA. In 2016, he launched Enjoy Repeat, a full-service hospitality management, development and branding firm, with the goal of creating exciting brands and events that are so enjoyed , that its patrons long to repeat the experiences often.
Greg founded Enjoy Repeat after 12 years in the airport concession industry. The name of the company, Enjoy Repeat, is an ode to his first experience of standing in the restaurant kitchen called “Enjoys” then located in Downtown Detroit, MI. As a child, he understood that food is not only a necessity of life, but a conduit that connects people and bridges cultures. His father would let Greg and his twin brother come along to visits their family friend’s restaurant, Enjoys, and witness the magic of hospitality and its impact on people from all backgrounds. It was only a small place, he recalls, but the spirit of the hospitality industry was huge and left a lasting impression which ultimately led Greg to the thriving hospitality community as a career.
In 2005, after many years of working in restaurants in high school and college, Greg first entered the airport community at LAX after joining the management team at Concessions Management Services, Inc. dba CMS Hospitality (CMS) as an Assistant Manager. In a short span of time Greg worked his way up to Director of Operations and ultimately to Senior Vice President of Business Development & Strategic Alliances. As an executive at CMS , Greg led the rebranding and reimagining of CMS, and was an integral part of the team that led CMS to become the first ACDBE Certified Firm to be awarded 3 prime contracts at LAX. Ultimately, Greg lead a team that would go on to grow revenue from $8mm in annual Revenue to $52mm in annual revenues, along the way helping change the perception of ACDBE operators in the various markets served Over the twelve year span spent with CMS Hospitality, Greg learned how to effectively navigate the various processes of airport concessions, work collaboratively with both LAWA, Westfield, The city of Los Angeles, as well as their multitude of brand partners and vendors. Greg has been a deep-rooted member of the LAX community and served on the inaugural board of LAWA’s WOW Guest Experience initiative, and has worked tirelessly to be on the forefront of the transformation that has been taken place at LAX for the last several years.
In 2019, Plummer served as the National Chair of the Airport Minority Advisory Council’s Business Diversity Conference in Los Angeles, CA. In this capacity, Greg was a part of team producing the most attended Business Diversity Conference in the 34 year history of the event, with record revenue generated, attendance and participant satisfaction. Greg attributes this success to collaborative effort of AMAC Members, The Los Angeles World Airport and Unibail-Rodamco-Westfield.
Enjoy Repeat, Inc. also partners with the City of Los Angeles to develop and operate food & beverage concessions at the world-renowned Rancho Park Golf Course, the busiest Golf Course across the United States, as well as the Woodley Lakes Golf Course. During the pandemic, Enjoy Repeat partnered with the Los Angeles Homeless Services Authority to cater over 1,000 daily meals to persons experiencing homelessness from the golf course kitchen. Greg was deeply impacted by this experience, further cementing his belief that hospitality has a profound impact on people no matter what the circumstances.
In 2020, Greg orchestrated the historic acquisition of the SSP America Portfolio of Restaurants at LAX in which he was a joint venture minority partner, becoming the managing partner. At the height of the pandemic, Plummer saw an opportunity to realise his career long dream of being an owner -operator and successfully navigated the purchase, restructuring and redevelopment of the business to create what it is today. Currently, he also serves as CEO and Managing Member of Concord Collective, the new operator of the recently acquired portfolio of restaurants. Concord Collective is the newest 100% ACDBE and woman-owned Prime Restaurant operator at LAX operating exciting brands like Chick Fil A, Panda Express, Ace Cerveceria & Tacos, Betcha Burger & Bar, Wetzel Pretzels, QWENCH Juice, Peet’s Coffee & Tea as well as various others. He is proud to lead a team of hospitality professionals that represent the true landscape of Los Angeles and is hyper-focused on building a company that will be recognised as best in class.
Outside of work, Greg serves on the board of directors for the Airport Minority Advisory Council (AMAC) Foundation and also serves on the board of the Airport Restaurant and Retail Association. He is also a mentor for the Achievers program, which focuses on preparing inner city young men for college and adulthood, and is a charter member of the LAX drinking club, an unofficial crew of LAX professionals that gather after work and celebrate and and/or grieve the daily happenings at LAX.
Greg is a proud graduate of Morehouse College and an even prouder husband and father to two wonderful daughters; Lotus Simone and Phoebe Raine. He can be described in a few words – helpful, passionate, resilient, and friend.
